I loved this month’s theme of breads, quick breads, and breakfasts. You can go to a lot of fun places with this category. Thanksgiving and Christmas is such a great time for food and baking anyway, and adding some different breakfasts in there just seems so festive and company friendly both.

I’m missing a yeast bread recipe this time, but there’s always next year. Besides, as much as I adore (make that crave) a good yeast roll, I find myself reaching for the quick bread recipes time and time again. My favorite is the 5-inch mini-loaf. I take any quick bread recipe for a 9 inch loaf pan and use 3 mini’s instead. Bake for approx. 45 minutes. The serving sizes seem so much more versatile and when I am serving them alongside a soup buffet they are perfect. They multiply easily for large groups too.

For Christmas I have served quick sweet breads for refreshments to groups larger than 900 with hot chocolate and spiced cider. At 8 to 10 slices for each mini loaf that’s 24 to 30 servings per 1 loaf batch. You start playing with those numbers and you can serve refreshments to upwards of 1,000 people for a really reasonable amount of money—and the labor isn’t too intensive either. Another great feature is the “no fork” one. You don’t even need a plate, just a tray of bread slices and some napkins. Gotta love that!
